Pecan Bars

Ok, so after watching one of my favorite cooking shows on FoodTv, Pioneer woman. She made mini pecan pies. https://www.foodnetwork.com/recipes/ree-drummond/mini-pecan-pies-3865277.amp. I tried to make my own crust, truthfully I forget who’s I used. So, after baking the crust and then adding the the insides and baking what seemed for forever, it was burned. I was so upset, I have tried off and on for years to make different recipes and none have come out.

I tried once more….

I have successfully made Barefoot Contessa’s shortbread recipe…. so I made it, adding finely chopped pecans. https://www.foodnetwork.com/recipes/ina-garten/shortbread-cookies-recipe-1945855.amp. (Forgot to take a pic of it). I then YouTube making pecan bars and found a recipe, cross your fingers. Pictured below is the bowl of chopped pecans, a bowl of the sugars, butter, and vanilla…. and a bowl of eggs (scrambled).

Shortbread baked, added pecans, then the combined sugars and eggs solution.

Done, cooled and cut.

Trying to get the first bar out, I almost cried. I used the wrong spatula… hubby helped and we got ours out. We tried a bite, alittle crispy-candy like, got stuck in teeth. Nuked in microwave for 30 seconds….made the inside like lava, but better. Not the best I have tasted, but not bad.

Mexican night tonight

When I got up today, I prepared a piece of pork to go into the pressure cooker.

I first put olive oil in the the pot, chopped an onion, bell pepper and carrots to sauté. Sautéed a few minutes to soften the veggies and then added precut baby bella mushrooms. Spiced it with salt, pepper and Goya total seasoning (the perfect seasoning).

I then added a teaspoon of chicken bullion.

This is awesome stuff to boost flavor!! (I even have the beef flavor on hand).

I only had the beans pictured below, so I added those with with the liquid.

I topped everything off with 1 cup of water, then added the pork. (Before adding, I cut off as much as the fat I could and went ahead and took the bone off too. The bone was very small I didn’t want it to leave shards to cause issues later).

Pressure cooked for 3 hours and let sit for about 2-3 hours more….it kept it in a constant warming.

I picked at it and it fell apart so easily and so yummy!!

OMG 😳 It was delicious!!

Tres Leche Cake

Hubby’s birthday is Wednesday, so I decided to make the cake now. I have been learning how to make Mexican things for my Mexican man.

Cooling the 3 milks and cake before putting the whipped cream on top.

Pressure cooker Beef Bourgignon

Brown stew meat in olive oil , put aside.
Cook up bacon and take out.
Add red wine and broth.
Add veggies of choice, chopped, I used onions, carrots, and mushrooms. Add beef and bacon.
Add pasta of choice, mine was veggie spirals. Put on the top, pressure cooked for 40 minutes.
Voila!! Yum!

Short-cut Chicken Marsala

I decided to make something different but quick, due to to my commute.

Chicken Marsala, short cut and was delicious!!

So, here is what I did.
Brown the cut up chicken breast pieces in olive oil and butter, then remove chicken.

Add onion and mushrooms and brown. All while boiling water for the fettuccine.

Add the marsala sauce, chicken and noodles, and mix well.

I put a lid on the pan and let the sauce come to a light bubble, then shut the burner off and let sit for 10 minutes.
Mixed well and then served.
