Spam, 🥚 egg, and cheese 🧀 English muffin

Another breakfast item I have made is a spam, egg and cheese english muffin. I cook the spam to get it warm and alittle crust on the outside, then add some teriyaki sauce to coat it. I toast the muffin, when done I add what ever cheese, havarti this time, and let it sit in the the air fryer to melt. Make a scrambled egg after the spam, then assemble it. Easy, pretty quick and yummy!

Chicken… chicken 🐓 thighs

Last night I threw some things together and made a very delicious dinner. I didn’t get any pictures last night because I was so hungry. But I will and I am getting a picture of the leftovers when I eat them today.

4 chicken thighs (skinless and boneless), 2-3 carrots (peeled and chopped into small pieces), 2 shallots (chopped in small pieces), chicken bone broth (homemade), salt & pepper to taste, 4 tblsp butter

Chop veggies, cut excess fat from thighs. Heat large pan on medium heat, add butter. Sauté carrots and shallots, when they start to brown add about 1/3 cup of the broth; sauté broth down and add more. Then add the chicken skin side down. Move around alittle every few minutes to keep from scorching and sticking of anything. After about 5-7 minutes flip chicken, doing the same. When almost cooked thru, take chicken out, add about 1/2 cup of heavy whipping cream. Mix in and keep mixing until thickened, then add chicken and juices back to pan. Flip chicken around in sauce, turn iff heat and leave in pan to thoroughly cook thru.

I served with mashed potatoes and garlic butter green beans. Putting more sauce on the chicken and some on the potatoes.

Not the prettiest, but it is delicious.

Breakfast 🍳, healthier

I went thru my freezers looking for yummy and healthy additions to my cream of wheat. Here is what I found and put together.

I make my cream of wheat with milk and some truvia. I added frozen dark cherries, greenish banana, frozen pecan pieces (I keep my nuts in the freezer for two reasons; to keep longer and I love them frozen when snacking with granny smith 🍏 apples), and a drizzles of honey.

A New Year, hopefully better.

Happy New Year…. Hope everyone has a better year than the past. 2021 was not that hood of a year for me and mine, but ended going into 2022 on a great note!!

The start of the year I moved positions at my place of work. It was good, same supervisor which wasn’t ideal. Mid year I moved to another position, still under the higher supervisor but different department…. The job itself I enjoy, the micromanaging I do not.

We adopted 2 more ferrets, bringing our total to 6. Now we have 2 cats, 6 ferrets and 3 lizards. One of the new boys has issues, have finally gotten under control, he will be in 2x’s daily meds but he is happy and healthy… as healthy as ferrets can be here.

Somewhere in between our neighbors apparently pissed someone off and caused a few drivebys. We live on one corner and share backyards with them and they are on another corner. The person that droveby drove up to their house and shot at 2 or 3 different times, different days. The last time they drove in front of our other neighbors house and shot down the road towards the backyard neighbors, one bullet ricocheted off the road. It went up our driveway, which is very steep, under my hubby’s car, through the garage door, through a laundry basket, some lunch boxes, through the wall into the chest of drawers in our room. If the chest had not been there it would have hit us/bed. We heard it, but didn’t find it until hubby went to put his clothes away and the bullet fell out of the drawer. We found the bullet casings in the street. The police in our area are useless, the detective have not followed back with me as I was assured.

Thanksgiving was uneventful, nice. Then my surgeries, which I am doing well. My hand surgeon says full recovery is about 6 months so I have awhile, but doing good. Just went to my sinus surgery post-op was new years eve and she is saying Im doing well. I should be recovering my smell and taste soon, it was not totally lost, but with the constant sinus infections effecting them for so many years I am not as confident. I am just hoping since I have less than before the surgery that I will regain something.

After the shootings we have been looking for a house to buy sooner than we were expecting. Our hopes got dashed alot with the market has been going. Since we live so close to Austin where it has become a hotspot for migration, its made it that much more harder. I posed the question to our now 3rd realtor, about a new build. And we lucked out! Our realtor is absolutely freaking awesome and came through! We were in like a lottery for a house, 1st to respond got dibs and thanks to her we got it. We were under contract in no time. We thought we wouldn’t close until March and not even a week under contract, we get a call about closing January 26th!! I am sad that I have not and will not be healed enough to help with lifting and moving, but I am so excited to have our own home! We love it, while small, we are happy. We have so many plans to do things, but that will be many projects for time to come… got to save money since we are spending all our cash.

After closing I will be looking for a new job. The drive alone (and hour to work and can be 2 coming home due to traffic) is not only annoying but very tiring. The micromanaging and other issues have just made me very uncomfortable, mad, emotional, etc., apparently my time there is done.

I have started going to a doctor, prior to Christmas, to help with weight loss. I have to get skinny to make myself happy and of course healthy. I am having hood luck, not as drastic as it could but I cannot just restrict myself so drastically as they are telling me. After one week, I have lost 3 lbs and not having as much issue waking. Staying awake is another issue, but some tweaks here and there we will get it.

I am crocheting and knitting still, working on a few things so that I can do some crazy and cute things.

Healing…still…..

Bruises are turning yellow…which means healing.

Didn’t sew, but have been carefully crocheting and knitting.

Nose is still sore internally. Mucus production is in high… gross yes but I getting cleared.

Have been job seeking as well. Have to find another one, the drama and micromanaging have just been unbearable and I cannot do that anymore. I’ve gained weight, which is detrimental to my NASH and life. My anxiety, depression and PTSD are off… I’m seeking a counselor and going to request meds again. Didn’t want to go back on them but going to have to.

After surgery…

Bruised but good. Stiff and sore wrists, but I expected. I’m exercising as instructed, not every 15 minutes but often.

Going to try and sew on my machine tomorrow… ambitious but I’m trying.

Nose is internally sore. Nasal washes twice a day for a month, lovely… not. Lol

Today, no visible problem.

Doing good. Pain meds are ok still have pain just not much, tolerable. Bored, can’t crochet/knit. Yet.

Hand bandages coming off today when hubby comes home. Curious to see if Im bruised visibly.

Impending surgeries…

Monday I will be having carpal tunnel surgery on both my hands. This is due there is nothing else that can be done at this point.

Tuesday I will be having sinus surgery, balloon sinuplasty… which will be 3 surgeries in one. Deviated septum repair, rootering of my sinuses, all of them in my head.

I finally accrued enough PTO from work, not the vacation I wanted but…. I’m sick of being sick and being in pain.

Im anxious for the pain that is coming but the whole outcome I look forward to.

Blueberry, Cherry and Peach Tart

We had something going going on at work that asked to bring a dessert. I made tarts…. One stayed at home. I used a Pillsbury pie crusts, frozen cherries, peaches and blueberries and chopped up the cherries.

The Pioneer Woman’s recipe was a base I used for the filling spices.

I sprinkled the crust with some sugar after it an egg wash.

Homemade ‘Salisbury Steak’

I vary this recipe at time of what I have in the cupboard/fridge and/or what I feel like putting the energy to put in.

Ingredients in this batch: 2 1/2 lbs Ground beef 1 chopped sweet onion (cutting yellow or white onions 🧅 are harsh on eyes) 3-4 Eggs (depending on how much ground beef being used) 2 sleeves of ritz crackers (1 for inside and 1 for coating outside) Salt & Pepper, to taste

Use any other to your liking. Have used Worcestershire sauce before.

Can use whatever veggies, bell peppers, mushrooms, celery, carrots, etc.

Going into the oven at 350 degrees. Bake until preferred doneness.
Out of the oven.
A cream gravy with mushrooms would have made this even better, but it was delicious!
